Harvest then and you get little oil – and the liveliest of the whole year.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003eIn the coming season we will be offering an \u003cstrong\u003eorganic Agoureleo\u003c\/strong\u003e – a rare and particularly precious olive oil from the very first days of the harvest.\u003c\/p\u003e\n\u003cp\u003eFor Agoureleo the olives are picked while still completely green and firm, and pressed within a few hours. The yield is small, the flavour all the more intense. It smells of green olives, freshly cut grass, herbs and young leaves.\u003c\/p\u003e\n\u003cp\u003eIts colour, bitterness and pungency come from the high content of natural polyphenols and are signs of great freshness and an early harvest.\u003c\/p\u003e\n\u003cp\u003eBecause a single litre of Agoureleo takes a great many olives, only a small quantity will be available. It is at its best raw – on bread, vegetables, salads, pulses, or simply on its own with a little salt.\u003c\/p\u003e\n\u003cp\u003eThis oil comes from the forthcoming harvest.
