Hot summers, cool nights, now and then a breeze of salty sea air, and a great deal of hand work – terroir, pure and simple. We harvest early, while the fruit is still green or just beginning to turn purple – which costs quantity and gives character.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eOn the palate.\u003c\/strong\u003e The nose shows grassy green notes with herbs and a hint of pear. In the mouth mild and round, with a good peppery kick in the background – the mark of a young, freshly pressed oil.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eCare, not haste.\u003c\/strong\u003e Picked by hand and taken to the mill the same day. Cold extracted, purely mechanically, without heat and without additives. Extra virgin olive oil, superior category.
